Casarecci
Narrow & twisted pasta about 5cm long. Ideal for meat sauces, served with a ragu or baked in a casserole. Allow 75-100g per serving and cook for 7-10 min.
Celentani
A pasta tube that is twisted like a corkscrew. Great for Pasta Salads. Allow 75-100g of penne per serving and cook for 10-12 min.
Conchiglie
Seashell shaped pasta, great in salads or with a meat sauce. 75-100g per serving and cook for 7 – 10 min.

Ditalini
A small tube ideal for soups. 75-100g per serving and cook for 7 – 10 min.
Fusilli
Spiral shape and often comes in mixed colours. Ideal for sauces, pale in colour to show off the colour of the pasta. Also great for salads. Allow 75-100g per serving and cook for 10 -12 min.
Maccheroni
Macaroni are thin tubes of pasta and best know for the classic Macaroni and cheese dish. Allow 50-70g per serving and cook for 7-8 min.
Penne
A slim ridge pasta tube, cut diagonally. Ideal with tomato based sauces. Allow 75-100g of penne per serving and cook for 10-12 min.
Angels Hair
Much finer than all the other pasta’s, this long thin noodle is best served with very light sauces or simply tossed with delicious fresh ingredients such as asparagus, salmon & garlic. Allow 75-100g per serving and cook for 6-7 minutes.
Spaghettini
A thin spaghetti delicious with Putanesca Sauce. Allow 75-100g per serving and cook for 6-7 minutes.
Spaghetti
The Spaghetti noodle is the thicker version of Spaghettini. Seafood or a clam sauce works beautifully with this noodle. Allow 100g per serving. Cook for 5 minutes.
Tagliarini
Tagliarini is a long flat noodle, delicious with our Pesto or Mascarpone Sauce. Allow 100g per serving. Cook for 5 minutes.
Tagliatelle
Long straight pasta, wider than Linguine but thinner than Fettuccine. Serve with thick creamy sauces that will cling to the pasta. Allow 75-50g per serving. Coil the Tagliatelle slowly into the boiling water, and cook as above for 10-12 minutes.
Linguine
Like a flat spaghetti – fairly narrow. Best used with medium to thick sauces, which will cling to the pasta. For a quick and delicious meal, serve with single cream and smoked salmon, parsley and a hint of lemon juice. Allow 75-100g per serving. Coil the linguine slowly into the boiling water and cook for 6-7 minutes.
Fettuccine
Fettuccine – usually about 6.5 mm wide – is wider than Linguine and therefore better to catch the sauce. Allow 75-50g per serving. Coil it slowly into the boiling water, and cook for 10-12 minutes.
Pappardelle
A thick flat ribbon, best served simply tossed with the best quality olive oil and fresh Parmesan cheese. Allow about 75g per serving. Cook for about 7 minutes.
Lasagne
Sheets of pasta used for baking. Remember, a baked Lasagne dish must always be topped with a layer of sauce to allow the layers of lasagne below to be properly cooked. Grated cheese (traditionally Parmesan) is often sprinkled over the final layer of sauce. Bake at 180°C, gas mark 4 for 30-35 minutes or until golden brown and bubbling.
